It’s been a while… this having babies gig is tough!
There’s the morning sickness, that lasts all day (for months on end), the brain fog and the logistics of being pregnant while working and caring for a toddler. I have simply had to learn to let go of some things. For now regularly washing my hair, relaxing brunches with friends, peaceful coffee breaks and going to the toilet with privacy are luxuries. But despite all that maintaining a plant-based diet, for me, will always remain. This one simple lifestyle choice reaps the most profound rewards. You could think of it as doing double duty or getting double the bang for your buck. You gotta eat… so why not eat plant-based and get all the health benefits while you are at it.
There are the small things… like the fact that my hair stopped thinning (I’m genetically dispossessed to have thinning hair in my family) in my early 20’s after minimising dairy. I stopped waking up feeling sick, in the night, after quitting my much loved dinners out with Italian restaurant Tiramisu. I lost the afternoon cravings for chocolate bars as I no longer had 3pm lethargy and for the first time in my life was easily able to maintain a stable healthy weight. There are so many benefits I have been rewarded with because of this simple and nutritious way of eating… but I am not going to list them all.
Put simply packing my plate with veggies, fruits, whole grains and legumes each day has become second nature and I could not imagine life any other way.
