Avocado, Chocolate & Oat Cookies

Ingredients
- 2 tablespoons ground flax seeds
- 2 tablespoons filtered water
- 1 large ripe avocado
- 3 tablespoons coconut oil
- ½ cup coconut sugar
- 2/3 cup cocoa powder
- 1 ¼ cups oat flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- ¼ cup plant milk
- oil to spray baking sheet
Instructions
- Pre-heat your oven to 180degC.
- Mix the ground flax seeds with the water in a small bowl and set aside to thicken.
- Remove the flesh from the avocado and cream this together with the coconut oil and sugar with your electric beaters or in your food processor.
- Add all the remaining ingredients, including the flax and water mix, to the bowl and combine well.
- Using two teaspoons spoon the mixtures out onto a baking sheet you have lightly sprayed with oil.
- Bake for 15 minutes at 180degC.
- Allow to cool for 5 minutes before transferring to a wire rack.
- Store in an airtight container.
