Just found this recipe berried in the my the archive from last year. I was thinking about vegan recipes after watching Forks Over Knives last night. Great documentary! I would recomend it to anyone interested in their health.
Apple and Blackberry Crumble (vegan)
6 green Granny Smith cooking apples
1 punnet blackberries
1 cup oat flour
½ cup organic oats
125g sunflower vegetable margarine
½ cup rapadura whole cane sugar
Peel the apples and slice into regular thin slices.
Fill 4 ramekins or 1 medium baking dish with the apple slices. Evenly distribute the blackberries on the top of the sliced apples.
Combine the other ingredients in a bowl with a metal knife.
Spoon the crumble mixture onto the top of the apples and blackberries.
Bake in a pre-heated medium oven (180 c) for 20 minutes or until the top is crunchy and golden brown.
Serve with your favorite soy ice-cream.
