It was my birthday last week and over the weekend my friends and I celebrated in style with a pizza party at my favorite Haberfield local, Napoli in Bocca Pizzeria Restaurant. All 12 of us ordered a pizza each and with huge bowls of rocket salad, dug in, passing the platters around to get a taste of everything. It was a great night and who doesn’t love pizza?! Thank you to my family and friends for making me feel so loved.

Now, the special occasion is over, and I am back on the healthy eating wagon, so I thought I would share a great Figure Loving Pizza alternative.

Winter Figure Loving Pizza
(makes 2)

2 rice Mountain Breads (or your favourite wholemeal or gluten free flat bread)
1/2 glove garlic
1 teaspoon coconut oil
3 large silverbeet leaves
4 spring onions
1 medium tomato
100g fetta
1 lemon

Lightly rub the 1/2 cut clove of garlic over the breads.
Place the breads directly onto the oven wire rack.
Thoroughly wash the silverbeet, cut out the hard white stalk and roughly chop.
Slice the white part of the spring onions into thin rounds and saute in a pan with the coconut oil for 3-5 minutes.
Add the chopped silverbeet to the pan and continue to saute for a further 5 minutes.
Slice the tomato as thinly as possible using a mandolin slicer and distribute evenly over the bread.
Evenly layer on the cooked spring onions and silverbeet and crumble over the fetta cheese.
Grill in the oven on the med-hot setting for 2-5 minutes.
You must keep a close watch of the pizzas while grilling as they can burn very quickly.
Serve straight away with a squeeze of lemon juice.
