With the weather warming up it is time to BRING ON THE SALADS. Not just for you but for your kids too.
Quinoa is high up there as far as trendy foods but it is not just hype. This “super grain” really is special. Like other whole grains it is a great source of key nutrients such as phytochemicals, antioxidants, B vitamins, Vitamin-E, magnesium, iron and fibre but it is also a good source of protein and it is gluten free.
Quinoa Salad for Infants and Kids
- cold cooked quinoa
- diced tomato
- diced avocado
- soft dried mixed herbs
Combine equal quantities of quinoa, tomato and avocado.
Add a portion of cold cooked quinoa (suitable for your child’s age) to a bowl.
For smaller children and infants peel the tomato with a vegetable peeler before dicing as fine as possible.
Dice the avocado and add to the bowl of quinoa along with the diced tomato.
Add a pinch of dried mixed herbs and combine well.
