Halloween recipes don’t come so easily to me… however I do love cooking with pumpkin. Pumpkin curries are always winners at our place but this week I mixed things up a little and put together a pumpkin dahl. This is pure and simple cooking at it’s best. One pot, a handful of ‘cheap as chips’ ingredients and wa-lah… dinner is served.

Ingredients
  1. 1 teaspoon coconut oil
  2. Large piece of ginger
  3. 1 red onion
  4. 2 cloves garlic
  5. 1 teaspoon curry powder
  6. 2 sticks celery
  7. 2 cups diced pumpkin
  8. 1.5 cups pre-cooked brown lentils
  9. 1 cup veggie stock
  10. 2 tablespoons tomato concentrate
  11. Salt to taste
  12. Blanched green veggies of your choice
Instructions
  1. Finely slice the onion and sauté with the coconut oil in a medium/large saucepan, over a medium heat, for 5 minutes.
  2. Peel and finely chop the ginger and garlic and add to the saucepan.
  3. Continue to sauté or a further 2-3 minutes.
  4. Add the curry powder and stir for another 2-3 minutes.
  5. Meanwhile finely dice the celery sticks and chop the pumpkin into a small dice.
  6. Add these to the saucepan along with the lentils, veggie stock and tomato concentrate.
  7. Allow to simmer gently for 30 minutes.
  8. Add salt to taste and serve with a pile of blanched green veggies of your choice.
