These little veggie packed individual serving size omelettes are guaranteed to be a hit with kids of all ages and stages and are tasty enough that even Mum and Dad will be tucking in. Great as fingers food or a wonderful addition to a adult big breakfast.

Ingredients
  1. ½ cup frozen peas
  2. 1 carrot
  3. 1 zucchini
  4. 1 spring onion
  5. 5 organic free-range eggs
  6. pinch mixed herbs
  7. olive oil for greasing
  8. 12 paper cup cake liners or disks of baking paper
Instructions
  1. Pre-heat your oven to 180degC.
  2. Defrost the peas and then roughly chop them with a knife.
  3. Peel and grate the carrot and then grate the zucchini.
  4. Finely slice the spring onion.
  5. Lightly beat the eggs with a whisk in a mixing bowl.
  6. Add the veggies to the eggs along with the herbs and stir through.
  7. Grease and line a 12 opening muffin pan to prevent sticking.
  8. Spoon the egg mixture evenly into the 12 opening.
  9. Bake in a moderate oven, for 15-20 minutes, or until the egg has just set and is firm but not hard.
