Mini Veggie Omelettes

Ingredients
- ½ cup frozen peas
- 1 carrot
- 1 zucchini
- 1 spring onion
- 5 organic free-range eggs
- pinch mixed herbs
- olive oil for greasing
- 12 paper cup cake liners or disks of baking paper
Instructions
- Pre-heat your oven to 180degC.
- Defrost the peas and then roughly chop them with a knife.
- Peel and grate the carrot and then grate the zucchini.
- Finely slice the spring onion.
- Lightly beat the eggs with a whisk in a mixing bowl.
- Add the veggies to the eggs along with the herbs and stir through.
- Grease and line a 12 opening muffin pan to prevent sticking.
- Spoon the egg mixture evenly into the 12 opening.
- Bake in a moderate oven, for 15-20 minutes, or until the egg has just set and is firm but not hard.
