I have the house to myself tonight… so what better way to spend a Friday night then to make a yummy dinner and curl up in front of the TV.
Chargrilled Veggies, Chickpea and Halloumi Salad
1 red Pepper/Capsicum
1 red Pepper/Capsicum
1 1/2 Zucchinis/Courgettes
400g tinned Chickpeas
2 cups Mixed Salad Leaves
1/2 Lemon
2 tablespoons chopped Fresh Mint
2 teaspoons Sesame Oil
2 teaspoons Agave
1 tablespoon Pesto
1 packet Halloumi
Chargrill chopped peppers and zucchinis until soft. Drain and rinse chickpeas. Add chickpeas, veggies, chopped mint and salad to a bowl. Make a dressing from the juice of 1/2 lemon, oil, agave and pesto. Pour the dressing over the salad and veggies and toss. Pan fry the halloumi so it is golden brown on both sides. Serve salad on a platter with crispy halloumi on top.
