I was keeping dinner simple at home tonight. We had easy but healthy Blackeye Bean Burgers.

Blackeye Bean Burgers

400g canned Blackeye Beans
2 slices of Brown Bread
1 Egg
2 tablespoons Brown Rice Miso Paste
2 tablespoons Quinoa Flour
2 teaspoons Harissa
Brown Bagel
Mixed Salad Leaves (for serving)
Tomato Ketchup (for serving)

Tear up the brown bread into small pieces and combine with all the other ingredients in a bowl. Use a potato masher to mash the everything together.

Divide the mixture into 4 and roll each portion with your hands into a ball. Heat a good dash of rapeseed oil in a pan. Add each ball to the hot oil and flatten down into burger shapes. Fry the burgers for about 4 minutes on each side or until brown and crispy.

Cut the bagels in half and load up with mixed salad leaves and a dolop of tomato ketchup. Place the hot crispy burger patty ontop of the salad and sause and put on the lid of the bagel.
