It wasn’t until recently, when I got some stir fry tips from trainer Kardina Pauza, that I perfected my big veggie stir fry recipe.

Stir Fry

1 teaspoon Sesame Oil
1 tablespoon Water
1 teaspoon Toasted Sesame Oil
1/2 medium Red Onion
2 Quorn Fillets or 1/3 packet of Tofu
1/3 large Red Pepper
1/3 large Yellow Pepper
1/3 cup Snow Peas
1 cup Mushrooms
1/2 teaspoon Ground Ginger
1/2 teaspoon Garlic Powder
2 tablespoons Tamari Soy Sause
1 teaspoon Sesame Seeds
1 pinch Cayenne Pepper
1/4 cup Cashew Nuts
Lemon to taste

Chop up the onion into 1/2 cm strips and fry in the sesame oil and water for 5 minutes. Chop up the peppers and mushrooms and add to the onions. Add in the ground ginger, garlic powder, tamari. Stir well and continue to fry for another 2 minutes. Add in Quorn fillets which have been cup into strips and stir for another 2 minutes. Add in snow peas, cayenne pepper, cashew nuts and toasted sesame oil and stir for another minute. Serve with sesame seeds sprinkled over the top and a squeeze of lemon.

Handy hint:
Your body absorbs Calcium much more readily from sources such as sesame seeds, sea vegetables and leafy greens than from milk. Sesame seeds contain 1160 milligrams of calcium per 100g serving compared to just 118 milligrams per 100g serving of whole milk.
