Basic Paleo Pancakes Recipe

Ingredients
  1. 2 medium ripe bananas
  2. 3 large organic free-range eggs
  3. olive oil for pan
Instructions
  1. Blender: Roughly slice the bananas and blend for 5 seconds with the eggs until just combined.
  2. Bowl: Lightly whisk the eggs in a small bowl. Mash the bananas with a fork in another bowl and then combine the whisked eggs and mashed bananas.
  3. Lightly spray a large frypan with olive oil using a oil sprayer/atomizer bottle.
  4. Place over a medium heat and pour in the pancake batter in batches.
  5. I find small (pikelet) sized pancakes easier to work with.
  6. Once firm and golden underneath flip using a spatular.
  7. Cook until the other side is golden.
  8. Serve with fresh berries.
