I have mentioned before that I often have a bag of carrots handy in the fridge. These are great raw but sometimes I like to use them for a flavourful side dish. These tasty baked carrots make the perfect accompaniment to any veggie lovers dinner or work well as cold left overs on a salad.
- 1kg carrots
- 1 tablespoon harissa
- 2 tablespoons olive oil
- 1 teaspoon caraway seeds
- Preheat your oven to 180degC.
- Peel the carrots and slice in half length-ways.
- Combine the sliced carrots with the harissa, oil and caraway seeds in a large baking dish and stir well.
- Bake in the moderate oven for 30 minutes or until the carrots are soft.
