You can take a veggie burger patty in so many directions! Pack them with beans, lentils, grains, veggies, herbs and seeds. They are so versatile, healthy, convenient, easy to make and a real crowd pleaser. They are really one of the ultimate vegetarian foods. Serve them with a simple salad or in a burger with a sourdough bun, salad, mushrooms, onions, avocado, pickle and your favourite sauce.

Amaranth & Bean Burgers Patties

  1. 1/2 cup amaranth
  2. 1 tablespoon pepitas
  3. 2 tablespoons sunflower seeds
  4. 1 1/2 cups water
  5. 3 spring onions
  6. 1 large handful of baby spinach leaves
  7. 1 small handful of fresh herbs of your choice (e.g. mint, basil)
  8. 1 egg or flax egg (1 tablespoon of ground flax seeds mixed to 2 tablespoons water)
  9. 1/2 cup oat (or gluten free) flour
  10. salt and pepper
  11. rice bran oil to shallow fry
  1. Add the amaranth seeds and water to a saucepan and bring to the boil with the lid on.
  2. Reduce the heat to a minimum for 15 minutes.
  3. Turn the heat off (leaving the lid on) and allow to stand for another 10 minutes.
  4. Allow to cool.
  5. Finely slice the spring onions, spinach and herbs and add to the cooled amaranth along with the egg, flour, salt and pepper.
  6. Combine well and form into patties with your hands.
  7. Shallow fry in batches for a few minutes on each side until golden brown.
