Amaranth & Bean Burgers Patties

Ingredients
- 1/2 cup amaranth
- 1 tablespoon pepitas
- 2 tablespoons sunflower seeds
- 1 1/2 cups water
- 3 spring onions
- 1 large handful of baby spinach leaves
- 1 small handful of fresh herbs of your choice (e.g. mint, basil)
- 1 egg or flax egg (1 tablespoon of ground flax seeds mixed to 2 tablespoons water)
- 1/2 cup oat (or gluten free) flour
- salt and pepper
- rice bran oil to shallow fry
Instructions
- Add the amaranth seeds and water to a saucepan and bring to the boil with the lid on.
- Reduce the heat to a minimum for 15 minutes.
- Turn the heat off (leaving the lid on) and allow to stand for another 10 minutes.
- Allow to cool.
- Finely slice the spring onions, spinach and herbs and add to the cooled amaranth along with the egg, flour, salt and pepper.
- Combine well and form into patties with your hands.
- Shallow fry in batches for a few minutes on each side until golden brown.
