I like to hit the gym in the morning. I am not a gym junkie or anything but after eating all these yummy dishes I need to burn off a few calories. This is one of my favorite ways to make eggs in the morning after a good work out.

Breakfast Egg Wrap (x 2)

2 teaspoons Rapeseed Oil
1 Red Onion
1/2 Red Pepper/Capsicum
1/2 Yellow Pepper/Capsicum
1 Corn of the Cob
1 cup Baby Spinach
1/4 cup Coriander
5 Eggs
Pinch of Cayenne Pepper
2 Whole Wheat Tortillas

Saute the chopped red onion in the rapeseed oil until soft. Add the chopped peppers and loose corn kernel to the pan and saute for a further 3-4 minutes. Add the chopped baby spinach and saute for 30 seconds. Add in the lightly beaten eggs and stir until the eggs go firm. Stir through the chopped coriander and take the pan off the heat. Spoon the egg and veggie mix onto the warm tortillas, sprinkle the pinch of cayenne pepper over the top, and enjoy with someone you love.
