Try this yummy mixed salad for a quick lunch with a cheeky mexican inspired sweet nutty topping.
Rainbow Salad with Caramelized Nuts
(quantities per person)
2 handfuls of washed cos lettuce leaves
1/4 red apple
1 small beetroot
40g caramelized nuts
1 teaspoon extra virgin olive oil
Juice of 1/2 mandarin
Thoroughly wash the cos lettuce leaves and arrange them on a plate.
Using a mandolin slicer, thinly slice the zucchini and apple, and arrange on top of the lettuce.
Peel and grate the raw beetroot and place in the centre of the salad plate.
Roughly chop the nuts and place on top of the grated beetroot.
Drizzle the salad with the extra virgin olive oil and mandarin juice.
Tuck in and enjoy!
