<p><strong>Chargrilled Veggies, Chickpea and Halloumi Salad</strong></p>
<p>1 red Pepper/Capsicum<br />
1 red Pepper/Capsicum<br />
1 1/2 Zucchinis/Courgettes<br />
400g tinned Chickpeas<br />
2 cups Mixed Salad Leaves<br />
1/2 Lemon<br />
2 tablespoons chopped Fresh Mint<br />
2 teaspoons Sesame Oil<br />
2 teaspoons Agave<br />
1 tablespoon Pesto<br />
1 packet Halloumi</p>
<p>Chargrill chopped peppers and zucchinis until soft. Drain and rinse chickpeas. Add chickpeas, veggies, chopped mint and salad to a bowl. Make a dressing from the juice of 1/2 lemon, oil, agave and pesto. Pour the dressing over the salad and veggies and toss. Pan fry the halloumi so it is golden brown on both sides. Serve salad on a platter with crispy halloumi on top.</p>
