It is the week before Christmas which means it is time for me to make those last minute Christmas treats. I have been reading a lot about the benefits of raw cacao so thought I would create a recipe for raw Christmas truffles.
Raw cacao is packed with healthy antioxidants which is greatly reduced in the cooking process of regular chocolate. The nutrients found in this raw form also help to keep us happy, energised and healthy.
Raw Chocolate Truffles
Makes about 36 truffles
300g raw organic coconut oil (butter)
1 1/2 cups raw organic cacao powder
1/3 cup raw organic agave syrup
1 cup almond meal
1 cup desiccated coconut
Melt the coconut oil in a large mixing bowl over a saucepan of warm water.
Stir in the cacao powder and agave.
Allow to firm in the fridge for 30 minutes.
Transfer the mixture to the food processor and wiz until smooth.
Spoon mixture into a clean mixing bowl and stir in the almond meal.
Allow the mixture to firm in the fridge for 15 minutes.
Using two teaspoons form the mixture into small balls.
Roll the balls in coconut and lay out on a plate in the fridge.
Store in the fridge until just before time to eat.
Share with friends and family over Christmas.
